MEGAN LEARNS TO COOK: CURRENT FAVORITE BREAKFAST

Here’s the thing, I’m no food blogger, but I am a food lover. And my love for food has started to grow my enjoyment of cooking. So everyone once in a while, I thought it could be fun to share what I’ve been learning. Welcome to my cooking journey.

I found my new favorite breakfast, and I need to tell you about it. It’s simple really, but I am LOVING it. If you love breakfast foods as much as me, you need to try this out. I also have a new favorite caffeine boost for any coffee drinkers out there, or maybe you’re new to it and not quite ready for straight black coffee.

Spinach + Egg + Cheese Scramble

It’s really as simple as it sounds. All you will need for your new favorite breakfast:

  • 2 Eggs

  • Spinach (roughly 3/4 cup-1 cup)

  • Goat Cheese (about 2-3 TBSP)

  • Butter

  • Salt

  • Pepper

Add a little butter to a small pan/skillet, about 1 TBSP, and heat on low-medium heat (I love to use the brand Earth Balance for any of my dairy free friends, or you can also just heat up a little olive or avocado oil).

While your butter starts to heat up, crack your eggs and thoroughly whisk them up in a small bowl. Add salt +pepper. Tip: Use a fork to achieve a fluffier texture!

Once the butter is melted or your oil has been heated, add your spinach and cook until slightly wilted, stirring for about a minute or two. I prefer to use a rubber spatula but a wooden spoon works too. Just make sure you always use something that won’t scratch up your pan, especially if you are using a non-stick!

Next up you are ready to add your eggs! Pour the eggs in, and use your utensil of choice begin to move the eggs around the skillet, breaking them up as they scramble and mixing the spinach in.

Once your eggs are close to being done, maybe still slightly runny, turn off the heat, add your goat cheese and stir it in. Add any additional salt + pepper you may want, and you’re done! Serving this with a side of toast is always a good choice. You could also opt for a hash brown.

I’ve heard of and read a lot of different ways to make scrambled eggs. If you have a tried and true method, feel free to use that and just amp up your eggs by adding the spinach and goat cheese. Let me what you think!

Brown Sugar Cinnamon Latte

I’ve heard of the famous latte from Starbucks, but if I’m being honest, sometimes Starbs is just a little too sweet for me. And I have a sweet tooth, but usually it’s too much when I’m looking for a caffeine burst. When I came across a copycat Starbucks drink on Pinterest and all of the ingredients sounded so yummy, I had to make one for myself. After adapting it a little (way less sugar, better coffee - sorry, Starbs. You’re just a littleee too burnt for me, but I still love you), and less/different milk, I think we made the perfect coffee drink??? Try it out for yourself. Here’s what you will need.

  • Coffee beans

  • Oat Milk

  • Brown Sugar

  • Ground Cinnamon

    Tools - You will need a way to pull a shot of espresso for this! For an alternative, use 4 oz of brewed coffee using any method you prefer.
    Measure out 1 - 3 tsp of brown sugar, depending on how sweet you want your drink, into the mug you’ll pull the shot into.
    If you have some really great coffee beans, you may want to go less sugar so some of the natural sweetness from the coffee can come through! How to look for great coffee beans? That’s a post in itself, but if it’s got a roast date, origins and doesn't use the words “dark roast” or look oily, you are off to a good start!

    Add 1 - 2 dashes of cinnamon to the brown sugar

    Pull your shot of espresso over the brown sugar and cinnamon or add your 4 oz of coffee. Stir to dissolve. You can even use a hand-held frother here to mix it all.

    Now you have some options. You can either warm 4 - 6 oz. of oat milk (depending on how strong you want the coffee to come through) on the stove to around 170 -1 80 degrees for a cozy warm drink or add the oat milk directly to the coffee.

    If you are going for a warm cozy vibe, after your milk is heated slowly, add it to your drink. Sprinkle some cinnamon on top if you want a little extra.

    If you are going for an iced drink, after adding your oat milk, stir it up and add a small handful of ice.

    Then enjoy! There are a lot of ways you can get a little more fancy here, but this is one of my favorite coffee drinks right now!
