MEGAN LEARNS TO COOK: SPRING TEA PARTY

I am so glad spring is finally here because I can do even more of one of my favorite things… High Tea! This is a longstanding tradition between my mom and my sister and I, and I have the best memories associated with having tea with these two beautiful women in my life. Anytime I’ve had afternoon tea, it was usually broken down into 3 courses that were served on a three-tier stand. It consisted of sweets, fruit, fresh scones and small sandwiches. There’s a lot of history and proper names for the different types of afternoon tea experiences, which I recently learned as I was searching the subject, but today, the focus will be on my favorite part: the food! For this month’s Megan Learns to Cook I made two types of sandwiches perfect for tea time and some super tasty scones. Welcome to my tea party.

Tea sandwiches

Let’s start with what could go on your bottom tier. This week, I made a chicken salad, egg salad and a very simple peanut butter and jelly. I made the last one because I wanted something that spread thin enough so I could attempt to get them in a fun shape lol. I had never made any sort of “salad” sandwich before (which by the way I guess dressing makes a salad, because no lettuce here). So I went to the internet and found some recipes that I loved! Here’s what we cooked up:

Scones

For the middle tier, let’s add scones. And I learned there are different styles of scones! Generally, you would have a scone that’s almost more like a biscuit in the states, served with cream and jam (so good), but this time around, I made an American style scone that included some fresh blueberries. And oh my gosh… They were so good!

Sweets and Tea

For your final tier, include some small sweet bites and fruit at the top. Maybe some strawberries or grapes. Macaron or small bite desserts. These could be lemon squares, tea cakes, tarts or maybe mini cheesecake bites.
